foodstuff: baked oatmeal

every once in while, i discover a recipe that looks wonderful and that requires only ingredients which are already in my house.

this kind of recipe is my baker's nirvana, my special place of kitchen happiness. in these moments, i don't have to plan ahead or go on an ingredient gathering expedition. instead, i can instantly put on music and an apron and make something tasty.

recently, this recipe for baked oatmeal allowed me a morning of baker's nirvana...



when i discovered this creation, there was a new container of blueberries in my fridge and two perfectly ripe bananas just waiting for the right opportunity.

thus, i spent a saturday morning filling the house with the scent of vanilla, cinnamon, toasted nuts, and sweet roasting fruit.

i substituted two things in the recipe: i used sliced almonds because i didn't have walnuts, and i used quick cook steel cut oats because i didn't have rolled oats.

the almonds worked out beautifully, but the steel cut oats were extra grainy and slightly al dente. of course, this didn't stop me from eating some every single day until it was completely gone...but next time, i will use rolled oats.

Oh that looks SO yummy! I am going to make it tomorrow morning...I have oatmeal almost every morning (plain ol oatmeal packet), and I would love to try this...good thing I have blueberries in my fridge :) Thanks for sharing!

We just finished eating a hefty bowl of this...we used agave syrup as the sweetener and vanilla rice milk (which was what we had around.) Our fruit choices were bananas and blackberries.

I vascillated between almost crying and exploding with happiness while eating this. It was that good! Definitely my new favorite breakfast meal! Super A+.

We're taking a short break before we finish the rest of the pan. :)

in fact, i just came from wandering around the kitchen wishing to cook/bake something, but we need to do the shopping... wonder if i could get creative...

LOVE the idea of all those scents wafting around my home, they're some of my faves..... mmmmmmm

oats are the only grains i have, i'll try this on a high carb day.

this looks fabulous. & yes.. I learned long ago that any form of steel cut oats are just not a substitute for rolled oats (which I never have on hand. i am a steel cut oat girl!)

tammy...i just made this recipe again today but with rolled oats + it's even better. but i'm a steel cut girl too so now i have a half container of rolled oats left over. hmm...cookies? :)
