foodstuff: raspberry buckle

raspberries are my favorite fruit.

this is a bold statement, as i am completely wild about a few other fabulous fruits like strawberries and cherries.

but sweet red raspberries are my number one summer delight.

earlier this week, i had a beautiful bowl of the red beauties that looked like this...


perhaps you should come a little closer...


for a few weeks i've been eating them just like this, or on cereal, or with whipped cream...simple and delicious.

but i wanted to bake this particular bowl into a sweet treat.

i didn't have any fancy ingredients at home, just the standard eggs/milk/butter/sugar/flour combo.

so i searched and found this recipe for a raspberry buckle.

this is the kind of dessert you make when you only have the essentials.  a buckle is just a rustic crumbly sweet cake with roasted fruit in it.

first, you make a buttery batter and put the raspberries on top...



then, you bake it until the batter puffs up, surrounds the roasted raspberries, and turns golden brown...



i sliced it and served it warm with a sprinkle of powdered sugar and a huge dollop of whipped cream.

and i was in raspberry heaven.

I picked some raspberries earlier this evening. I wish I had saved them and followed your sweet recipe. On my to do list for sure.
